Seasoned with cumin, sweet paprika, and cinnamon, these cauliflower florets are roasted in an air fryer and topped with toasted bulgur. This vegetable-forward meze brings the warmth of Moroccan spices to the table. It is low in carbohydrates, with a touch of whole-grain texture from the bulgur.

Step by Step

How to make it?

1

Season the Cauliflower

8 min

Toss the cauliflower florets with the olive oil, cumin, sweet paprika, cinnamon, and salt.

2

Roast in the Air Fryer

15 min

Spread the cauliflower in the air fryer basket and roast at 200°C / 390°F for 15 minutes, until the edges are lightly browned. If you do not have an air fryer, roast it in an oven at the same temperature for 15 minutes.

3

Toast the Bulgur and Combine

7 min

Toast the bulgur in a dry skillet for 7 minutes, then mix it with the roasted cauliflower.

4

Serve with Lemon and Parsley

5 min

Drizzle with lemon juice, sprinkle with parsley, and serve.

Reminder

Do not cut the cauliflower into very small pieces; small pieces may dry out and become tough in the air fryer. If you do not have an air fryer, roast it in an oven at the same temperature for 15 minutes. Allergen: contains wheat (gluten from bulgur).
