A hearty Japanese home-style dish, motsuni is made by cooking tripe for a long time with miso and ginger. With no grains, it is a low-carbohydrate stew rich in fat and protein.

How to make it?

Boil the tripe

20 min

Boil the tripe pieces in plenty of water for 20 minutes, skimming off the foam. Drain and rinse.

Sauté

5 min

Sauté the ginger in sesame oil, then add the drained tripe and cook for a further 5 minutes.

Simmer

60 min

Add the water, soy sauce and scallion. Cook over low heat with the lid ajar for 60 minutes.

Add the miso

10 min

Dissolve the miso paste in a ladleful of hot water and add it to the pan. Cook over low heat for another 10 minutes, then serve.

Reminder

Skim the tripe during its initial boil and drain it thoroughly, or the stew will have an unpleasant smell. Allergens: contains soy (miso). Additional allergen check: check the soy sauce label for a gluten declaration, as ingredients vary by product.

20 dakikalık ilk haşlamada köpüğünü almayı ihmal ettim, güveç 95 dakika pişmesine rağmen hafif ağır bir koku aldı ve ailem pek beğenmedi. İkinci denemede köpüğü dikkatle aldım, sonuç tamamen değişti ama bu seferki puanım ilk deneyim için.
