Moutabal, a favorite Lebanese appetizer, is made by charring eggplants in an air fryer and mashing them with tahini, lemon, and garlic. Served with a drizzle of olive oil, this dip is delicious with vegetable sticks or crackers.

How to make it?

Char the eggplants

Prick the eggplants with a fork and place them in the air fryer basket. Cook at 200°C / 390°F for 20 minutes, until the skins are charred and the flesh is soft. If you do not have an air fryer, char them in an oven preheated to 220°C / 430°F for 35 minutes.

Scoop out the flesh

Once the eggplants have cooled slightly, halve them and scoop the flesh into a bowl. Drain off the excess liquid.

Mix the dip

Add the tahini, lemon juice, crushed garlic, and salt to the eggplant flesh. Mix with a fork or blender until smooth.

Serve

Spread the dip on a plate, drizzle with olive oil, and garnish with chopped parsley.

Reminder

Drain excess liquid from the eggplant before mixing it into the dip, or the result may be watery. Allergen: contains sesame (tahini).

Patlıcanları airfryer'da 20 dakika yerine 25 dakika pişirdim çünkü kabukları yeterince kararmamıştı, sonuç daha dumanlı bir tat verdi. Blenderle karıştırınca ezme inanılmaz pürüzsüz oldu, çatalla ezmekten çok daha iyi sonuç aldım.
