Paua, a prized abalone from New Zealand’s coast, is thinly sliced and marinated in a spiced vinegar brine. Cutting across the muscle fibers and allowing it to marinate softens its firm texture. This distinctive appetizer is also served as a snack.

How to make it?

Prepare the abalone

Slice the cleaned abalone thinly, cutting across the muscle fibers.

Prepare the brine

10 min

Mix the vinegar, water and salt, then add the garlic, bay leaf and whole peppercorns.

Fill the jar

5 min

Place the sliced abalone in a clean jar and pour in enough brine to cover it.

Marinate

90 min

Refrigerate the jar for 90 minutes, shaking it once a day, then serve.

Reminder

Slice the paua across the muscle fibers, or marinating will not soften its toughness. Shake the jar once daily while it is refrigerated so the brine reaches all sides evenly. Allergen: contains shellfish (abalone).

Deniz kulağı bulamadığım için yerine kalamar kullandım, doku olarak birebir aynı olmasa da sirkeli salamura gayet iyi işledi, 90 dakikalık bekleme kalamarı da yeterince yumuşattı ve tadı çok iyiydi.
