This traditional dairy-free halva is made by mixing starch with water, adding grape molasses and cooking until thick and dark brown. Getting the consistency right takes skill. Once cool, it can be sliced and stored in the freezer for a long time.

Cook the slurry over low heat for 15 minutes, stirring constantly, until thickened.
Add the grape molasses and continue cooking and stirring for 35 minutes, until the mixture is thick and dark brown and begins to pull away from the sides of the pan.
Pour the hot mixture into a greased mold.
Leave to cool at room temperature for at least 60 minutes, then slice.
Stir continuously while cooking the mixture; if it catches on the bottom, the burnt flavor will spread throughout the halva.
