Boil the chickpeas
60 minBoil the soaked chickpeas in plenty of water for 60 minutes, until tender.
A classic served cold, this chickpea dish is made by lightly sautéing cooked chickpeas with carrot, potato and onion in olive oil, then leaving them to rest in a lemon dressing. It makes a light but filling snack and can be kept in the fridge for a few days or in the freezer for weeks.
Boil the soaked chickpeas in plenty of water for 60 minutes, until tender.
Dice the carrot, potato and onion and sauté in olive oil for 10 minutes.
Add the cooked chickpeas, granulated sugar, salt and a little water and cook for another 10 minutes.
Remove from the heat and drizzle with lemon juice. Leave to rest at room temperature for 15 minutes, then chill in the fridge and serve cold.
When boiling the chickpeas, add the salt at the very end. Salting them too early makes the skins tough and slows down softening.
