Chickpeas behave differently from lentils in a filling: their skins are thicker, and you can still feel the chickpea even after mashing, giving the filling a heartier, meatier texture. For this recipe, mash the chickpeas with their skins on. There is also an option for peeling them, but peeled chickpeas make a smoother, more purée-like filling.

Cook the chickpeas

Discard the soaking water and cover the chickpeas with three times their volume of fresh water. Bring to a boil, skim off the foam, and simmer over low heat for 40 minutes, until a chickpea is easily crushed between two fingers. Add the salt during the last 10 minutes, then drain.

Knead the dough

Knead the flour, egg, salt and water for 10 minutes to make a firm dough. Cover with a damp cloth.

Prepare the filling

Finely chop the onion and cook it in oil for 10 minutes. Add the drained chickpeas and mash them with a potato masher, skins and all; leave some texture. Stir in the spices and spread the filling on a wide plate to cool.

Roll and cut the dough

Divide the dough into four pieces, roll each to 1.5 mm thick, and cut into 3 cm squares.

Fill and seal the dumplings

Place half of one 4 ml measure of cooled chickpea filling on each square. Bring the four corners together in the center and press the edges firmly to seal. The filling is coarse, and a sharp-edged chickpea can pierce the dough; remove any large pieces that have not been mashed.

Boil and dress the dumplings

Bring 3 liters of salted water to a boil and add the dumplings. Once they float, boil for 6 minutes more, then drain. Whisk the yogurt with the garlic and spread it over the dumplings. Sauté the tomato paste in butter for 1 minute, then drizzle it over with the mint.

Reminder

Soak dried chickpeas in cold water overnight for 10–12 hours, then discard the soaking water; this is inactive time and is not included in the total. The 40-minute dough rest and cooling the filling are also inactive. If using canned chickpeas, drain and rinse them well; the canning liquid will make the filling salty.

Nohudu ezerken biraz haşlama suyu kattım, dolgu kuru kalmadı. Hamuru dinlendirmek de gerekiyor, dinlenmemiş hamuru açarken kenarları yırtıldı ve dolgu haşlarken dışarı çıktı.
