Roll the dough out thinly and cut it into very thin strips.
Boil the noodles in boiling water for 3–4 minutes, then rinse with cold water.
Mix the onion with the hot beef stock and let it soften for 10 minutes.
Mix the noodles with the cooked beef and marinated onion. Season with black pepper and salt.
Serve at room temperature or chilled.
Store in a covered container in the refrigerator for 2 days.
