This savory cake is made with black olives and Kashar cheese. It takes more than simply omitting the sugar from a sweet cake: sugar also retains moisture, so without it the cake dries out quickly and needs more yogurt. The olives’ moisture matters too; if they are not drained, they loosen the batter and the center collapses.

Chop and drain the olives

Cut the olives into thick rings, place them in a strainer and let them drain on paper towels for 5 minutes. Taste one; if it is very salty, soak the chopped olives in cold water for 10 minutes, then drain again. Do not add extra salt to this batter; all the salt comes from the olives and Kashar cheese.

Whisk the wet ingredients

Whisk the eggs, yogurt and vegetable oil for 3 minutes, until evenly combined. Add the dried thyme and black pepper at this stage.

Add the flour

Sift in the flour and baking powder, then fold with a spatula just until no flour is visible. The batter will be thick and fall slowly from the spoon.

Fold in the olives and cheese

Use a spatula to fold the drained olives and three-quarters of the grated Kashar cheese into the batter. Reserve the rest of the cheese for the top.

Pour into the pan

Pour the mixture into a greased and floured loaf pan, smooth the surface and sprinkle the reserved Kashar cheese on top.

Bake

40 min

Bake in an oven preheated to 180°C / 355°F for 40 minutes. It is done when the Kashar cheese on top has melted into a golden crust and a toothpick inserted in the center comes out clean. Let rest in the pan for 10 minutes, then transfer to a wire rack.

Reminder

Cool the cake on a wire rack for at least 30 minutes; this time is not included in the recipe duration. The savory cake tastes best warm, but if you cut it while hot, the Kashar cheese will stick to the knife.

Zeytini doğrayıp süzmek şart, ıslak zeytin kekin içinde boşluk bırakıyor. Zeytin tuzlu olduğu için ayrıca tuz koymadım. Kaşarı hamura katlayarak karıştırmak gerekiyor, mikserle karıştırınca kaşar dağılıp kekin dokusunu ağırlaştırdı.
