Add the trimmed, finely chopped collard greens and toss for a few minutes to coat them with olive oil.
Add the salt, black pepper, and water. Cover and cook over low heat until the greens are tender.
Mix the cornmeal with a little water until smooth, then add it to the pot. Cook for a few more minutes until the dish thickens.
Important: Remove the tough stems from the collard greens, or the dish will be tough; use only the tender leaves. Allergen: contains cornmeal.
