Sauté the onion
5 minGently sauté the finely chopped onion in olive oil.
In this classic Aegean-style olive oil dish, okra is gently cooked with tomatoes and olive oil, then served with lemon slices. This recipe can be served chilled or at room temperature, making it a light option for summer meals.
Gently sauté the finely chopped onion in olive oil.
Add the grated tomato and sauté for a few minutes, then add the sugar and salt.
Arrange the trimmed okra in the pot and drizzle the lemon juice over it. Gently shake the pot and cook over low heat. Caution: Do not stir the okra with a spoon, as it may break apart; gently shaking the pot is enough.
Remove from the heat and let it cool to room temperature, then serve with lemon slices.
Important: Do not trim the okra stems too short when washing, and soak the okra in vinegar water for a few minutes to reduce sliminess. Allergen: no common allergens.
