This easy jarred preparation uses ready-made sun-dried tomatoes softened in warm water and vinegar, then layered in a jar with garlic, fresh basil, and extra-virgin olive oil. Serve alongside a cheese board or as a snack on crisp bread.

How to make it?

Soften the tomatoes

Soak the sun-dried tomatoes in a mixture of warm water and apple cider vinegar for 15 minutes, until softened. Drain them and pat thoroughly dry with paper towels.

Prepare the oil

Heat the olive oil with the crushed garlic, thyme, and red pepper flakes over low heat for 5 minutes to blend the flavors. Remove from the heat and let it cool until warm.

Fill the jar

Layer the dried tomatoes and basil leaves in a clean jar, sprinkling in the salt. Pour in the warm olive oil until the tomatoes are completely covered.

Reminder

Pat the tomatoes thoroughly dry before placing them in the jar; any remaining water may lead to mold in the olive oil. Keep the jar refrigerated, and make sure the tomatoes remain covered by oil.

Domatesleri suda yumuşatırken yeterince kurulamadan kavanoza doldurdum, birkaç gün sonra yağın üzerinde beyazımsı bir tabaka oluştu ve atmak zorunda kaldım. Uyarıyı okumuş olsam da suyu tam gideremediğimi fark etmemiştim, bir dahaki sefere daha uzun süre kurulayacağım.

İki hafta içinde tüketilmesi öneriliyor ama ben kavanozu buzdolabında üç haftadır saklıyorum, domatesler hep yağın altında kaldığı için hiçbir bozulma belirtisi görmedim; süre biraz temkinli verilmiş gibi duruyor bence.

Güvenlik payı bıraktık çünkü ev ortamında sıcaklık değişkenlik gösterebiliyor; domatesler hep yağın altında kalıyorsa ve kokuda değişiklik yoksa üç hafta da sorun olmaz, yine de gözlemlemeye devam edin.
