Olive oil-stuffed radishes are a classic meatless Iraqi dish. Large radishes are hollowed out, filled with a rice, tomato, and mint mixture, then cooked in an air fryer until lightly browned. Hollowing the radishes to an even thickness helps the filling cook evenly without splitting the skins. This hearty dairy-free dish can also be served cold for breakfast.

How to make it?

Hollow the Radishes

Cut off one end of each radish and hollow it with a corer, leaving a medium-thick wall.

Prepare the Filling

Mix the rice with the tomato, onion, mint, parsley, olive oil, and salt.

Stuff the Radishes

10 min

Fill each radish two-thirds full with the prepared mixture and close the ends.

Cook in the Air Fryer

25 min

Moisten the stuffed radishes with lemon juice, arrange them in the air fryer basket, and cook at 180°C / 355°F for 25 minutes, until the skins are lightly browned. If you do not have an air fryer, cook them in an oven preheated to the same temperature for 35 minutes.

Reminder

Do not hollow the radishes too thinly, or their skins may split during cooking. Leave a medium-thick wall.
