This sherbet reduces kitchen waste by simmering and steeping orange peels with cinnamon after the oranges have been juiced. Served hot, the drink balances the peels’ slight bitterness with honey.

Step by Step

How to make it?

1

Prepare the peels

10 min

Scrub the orange peels thoroughly and lightly scrape off any remaining white pith.

2

Simmer

40 min

Add the peels and cinnamon stick to a saucepan with the water. Bring to a boil, then simmer over low heat for 40 minutes.

3

Steep

60 min

Remove from the heat, cover, and let steep for 1 hour.

4

Strain and serve

5 min

Strain out the peels, reheat the liquid, stir in the honey, and divide among warm cups.

Reminder

Scrub the peels thoroughly to remove any wax coating or dust, which can make the sherbet taste bitter.
