These yeast-raised breakfast rolls get both orange juice and zest in the dough. Nearly all the aroma comes from the zest; the juice adds sweetness and acidity. Avoid grating into the white pith, which is bitter and becomes more noticeable in the oven. Rubbing the zest into the sugar transfers its oils and spreads the aroma throughout the dough.

Zest the oranges and rub into the sugar

Wash and dry the oranges. Using the fine side of a grater, remove only the orange zest; when the white pith appears, move to another spot. Add the zest to the sugar set aside for the dough and rub with your fingertips for 1 minute. The oils have transferred when the sugar becomes damp and smells distinctly of orange.

Knead the dough

Dissolve the yeast in the warm milk and let stand for 5 minutes. Add the orange sugar, orange juice, melted and cooled butter, egg, salt, and flour; knead for 10 minutes. The dough should feel slightly tacky and stretch into a thin membrane. Cover and let rise.

Shape the rolls

Divide the risen dough into 16 pieces, roll each into a ball, and arrange them spaced apart on a parchment-lined baking sheet. If you like, braid three strands together to make small braids. Cover and let rise a second time.

Brush the tops

Brush the risen rolls with beaten egg yolk and sprinkle with granulated sugar. The sugar will remain granular rather than melt in the oven, adding a crisp bite.

Bake

25 min

Bake in an oven preheated to 180°C / 355°F for 25 minutes. They are done when the tops are deep golden and tapping the bottom produces a hollow sound. Cool on a wire rack; rolls placed in a closed container while hot will sweat and soften on the surface.

Reminder

Let the dough rise for about 75 minutes, until doubled, then let the shaped rolls rise on the baking sheet for another 25 minutes. These rising times are not included in the recipe’s total time.

Kabuğu şekerle ovma adımı yağını çıkarıyor, doğrudan hamura atınca koku bu kadar olmuyor. Hamuru iki kez mayalandırmak da gerekiyor, tek mayalamayla çörek ağır ve sıkı çıktı.
