Arrange the slices in a single layer on a parchment-lined tray, without overlapping, and sprinkle with cinnamon. Dry them in an oven preheated to 150°C / 300°F, turning them occasionally, until the edges are crisp. Transfer to a wire rack to cool; they will crisp up as they cool.
Important: Slice the apples as thinly and evenly as possible so the chips dry and crisp at the same rate. They may still be slightly soft when they come out of the oven; they crisp up as they cool. Store in an airtight container to protect them from moisture.
