These fried pastry rolls are a classic Istanbul tavern appetizer made with three main ingredients: Turkish cured beef, Turkish semi-hard cheese, and roasted peppers. The fenugreek coating on the cured beef perfumes the phyllo as it fries, so do not scrape it off. Fold the phyllo over itself to keep the cheese from leaking out during frying. Serve hot; the cheese firms up as it cools.

How to make it?

Roast the peppers

Roast the peppers over an open flame or under the oven broiler, turning them until the skins are blackened and blistered. Transfer them to a bowl and cover. Once cool, peel off the skins, remove the seeds, cut the peppers into strips, and place them in a strainer.

Cut the ingredients

Cut the Turkish cured beef, including its fenugreek coating, into thin strips; do not scrape off the coating, as it will flavor the phyllo as it fries. Cut the Turkish semi-hard cheese into thick matchstick-size pieces; do not grate it, as grated cheese will leak out immediately during frying.

Roll the pastries

Cut each phyllo sheet in half and fold each semicircle in half. Place the Turkish cured beef, semi-hard cheese, and peppers along the wide edge, fold both sides inward, and roll up tightly. Seal the ends with beaten egg; any opening will let the cheese leak out.

Heat the oil

Heat the oil in a deep skillet over medium heat. A small piece of phyllo dropped into the oil should puff up immediately and rise to the surface. If the oil is too hot, the phyllo will burn before the Kashar melts.

Fry the pastries

Fry the pastries in three batches without crowding the pan, for 1.5–2 minutes per side. Once golden brown, transfer them to a paper-towel-lined plate without stacking, and serve immediately.

Reminder

After chopping the roasted peppers, let them drain in a strainer for 10 minutes. Wet peppers can pierce the phyllo from the inside and cause the oil to splatter during frying.
