Add the chicken stock and soy sauce and bring to a boil. Add the softened noodles and cook over medium heat, stirring, for 8–10 minutes, until the liquid is absorbed.
Serve hot with a lemon wedge.
Store covered in the refrigerator for 2 days. To reheat, sprinkle with a little water and warm it in a skillet while stirring to keep the noodles from drying out.
