This Kayseri-style cured meat is made by pressing beef with salt, coating it with a spiced paste called cemen, and air-drying it. It involves no cooking step or applied heat, although the process takes several days.

How to make it?

Salt the meat

Rub the beef round with coarse salt until every side is covered. Place it on a perforated tray, weight it down, and refrigerate; the salt draws out excess moisture and firms the texture.

Rinse and hang the meat

Rinse the salted meat under running water to remove excess salt. Hang it in a cool, well-ventilated place to dry for 2 days.

Prepare the cemen paste

Mix the crushed garlic with fenugreek, red pepper flakes, paprika, and cumin. Add warm water to make a spreadable paste, then let it rest overnight.

Coat the meat with cemen

Coat every side of the partially dried meat with a 3–4 millimeter layer of cemen paste, then leave it to dry in a well-ventilated place for 4 more days.

Slice thinly and serve

Slice the dried meat paper-thin with a sharp knife and serve at room temperature; thinner slices give a more balanced cemen flavor.

Reminder

Hang the meat to dry in a well-ventilated place out of direct sunlight; humidity increases the risk of mold. After cutting, wrap the remaining piece tightly and refrigerate; use within 1 month.

Bizim tarafta pastırma genelde sonbaharda havalar serinleyince yapılır, ben de eylül sonunda denedim ve 9 günlük sürecin sonunda gerçekten kasap pastırmasına yakın bir tat çıktı. Sadece kurutma yerini biraz daha rüzgarlı seçmem gerektiğini fark ettim.

Çemen otu bulamadığım için tarifte geçen miktarın yarısı kadar hardal tozuyla denedim, koku daha keskin oldu ama ailem yine de beğendi. Bir dahakine gerçek çemen otuyla yapıp farkı görmek istiyorum.

Tarifte hangi tür tuz kullanılması gerektiği net değildi, ben elimdeki iyotlu sofra tuzuyla denedim ve et beklediğimden çok daha fazla sertleşti; kaba deniz tuzu kullansaydım gerçekten fark eder miydi merak ediyorum.

Haklısınız, kaba deniz tuzu belirtilmesi gerekiyordu; ince iyotlu tuz etin içine hızlı işleyip fazla su çekiyor ve sertlik yapıyor. Kaba tuzla aynı 3 günde çok daha yumuşak bir sonuç alırsınız.

Tarifte önerilen 3 gün tuzlama süresini tam uyguladım, but eti 1,5 kilodan yaklaşık 1,2 kiloya düştü ve doku gerçekten sıkılaştı. Çemeni 4 gün yerine 5 gün kurutunca tat daha da yoğunlaştı.
