Boiled potatoes are mashed with strained yogurt, garlic and scallions to make this soft-textured meze. Quick to prepare from simple ingredients, it is a light starter for a meze spread.
Boil the potatoes in their skins in plenty of water until soft enough for a fork to pierce them.
Peel the boiled potatoes and, while still hot, mash with a fork or potato masher until smooth.
Add the strained yogurt, crushed garlic, scallions and olive oil to the mashed potatoes and mix thoroughly. Adjust the salt.
Spread the potato meze onto a serving plate, drizzle with a thin stream of olive oil and serve chilled.
Important: Mash the potatoes while hot for a much smoother texture than you would get after they have cooled. Allergen: contains a dairy product. The potato meze can be kept in the fridge for 1–2 days; it may thicken as it stands.
