These crisp air-fryer croquettes are made with mashed boiled potatoes and grated Kashar cheese, then coated in breadcrumbs and cooked with a little oil. They also make a practical lunchbox snack and can be served cold; they can be baked in a preheated oven instead.

How to make it?

Boil and cool the potatoes

Boil the potatoes with their skins on, then peel them. While still hot, mash them thoroughly with a fork and leave them for 20 minutes, until they reach room temperature.

Shape the croquettes

15 min

Mix the mashed potatoes with the grated Kashar cheese and salt, then shape the mixture into cylinders.

Coat the croquettes

10 min

Coat each croquette first in flour, then in beaten egg, and finally in breadcrumbs.

Cook

15 min

Place the croquettes in the air-fryer basket and cook at 200°C / 390°F for 15 minutes, until golden. If you do not have an air fryer, bake them in an oven preheated to 200°C / 390°F for 22 minutes.

Reminder

Let the potatoes cool completely before shaping, or the croquettes will stick to your hands. Do not skip the cooling time. Allergens: contains wheat (gluten) from the flour and breadcrumbs, milk from the Kashar cheese, and egg.
