A legendary street food sold at Kyiv metro stations, perepichka is made by wrapping a beef sausage in garlic and chili-spiced dough and deep-frying it until puffed. This quick, spicy snack is eaten hot by hand.

Make the Dough

Mix the flour, baking powder, and salt. Add the water and egg, then mix in the crushed garlic, red pepper flakes, and sweet paprika to form a soft, nonsticky dough.

Wrap the Sausages

Pinch off pieces of dough and place one beef sausage inside each. Seal the ends tightly.

Fry

Deep-fry the wrapped sausages in hot oil for 8 minutes, turning occasionally, until golden and puffed.

Reminder

If the oil is not hot enough, the dough will absorb oil and turn heavy. Drop in a small piece of dough and make sure it immediately bubbles and rises to the surface. Allergen: Contains wheat (gluten) and egg.

Dana sosis bulamadığım için editör notundaki gibi dana sucukla denedim, hamurun içinde biraz daha yağlı ve baharatlı bir dolgu oldu ama gerçekten çok lezzetliydi. Pul biberi de biraz azalttım çünkü sucuk zaten kendi baharatını taşıyor.
