Veracruz is Mexico’s gateway to the Atlantic, and its cuisine reflects the ingredients that arrived through that port: olives, capers, and bay leaf from Spain, alongside local tomatoes and chiles. This fish dish brings them together in one pan. Cook the sauce separately ahead of time; if the fish cooks in the sauce from the start, it may fall apart before the sauce thickens.

How to make it?

Rub the fish with lemon

Rinse the fillets under cold water and pat them completely dry with paper towels. Rub both sides with lemon juice and salt, arrange them in a single layer on a tray, and refrigerate. The lemon freshens the fish and firms its surface slightly.

Peel and chop the tomatoes

Score an X on the top of each tomato, place them in boiling water for 30 seconds, then transfer them to ice water and slip off the skins. Cut them into large dice; keep the juices from the seeds, as they provide liquid for the sauce. Slice the onion into fan-shaped wedges, cut the chile into rings, and slice the garlic.

Sauté the onion and garlic

Heat the olive oil in a wide skillet. Cook the onion over medium heat for 5 minutes, until softened but not browned. Add the sliced garlic and cook for 1 minute, then stop as soon as it becomes fragrant; burnt garlic will make the sauce bitter.

Cook the sauce

Add the tomatoes, bay leaf, thyme, and cinnamon stick. Cook over medium-low heat until the sauce thickens and oil rises to the surface. When you tilt the skillet, there should be no watery pool. Remove the cinnamon stick and bay leaf at this point.

Add the olives, capers, and chile

Coarsely chop the green olives and add them to the sauce with the capers and chile rings. Cook for 3 minutes. Grind in the black pepper and taste; the olives and capers are already salty, so you may not need any extra salt. If needed, add it in 1 g increments.

Bake the fish

Preheat the oven to 190°C / 375°F. Spread half the sauce in a baking dish, arrange the fillets in a single layer on top, and spoon the remaining sauce over them. Insert a fork into the thickest part of a fillet and gently twist; it is ready when the flesh flakes apart. Sprinkle with chopped parsley and serve hot.

Reminder

After rubbing the fillets with lemon and salt, refrigerate them for 20 minutes; this draws out a little moisture and helps keep them intact in the sauce. Allergens: contains fish. Check packaged products for other allergens.

Kaparinin tuzunu iyice durulamak gerekiyor. İlk seferde sosa hiç tuz atmadığım hâlde fazla tuzlu oldu. Domatesleri soyma adımını da atlamayın, kabuk sosun içinde kıvrılıp kalıyor ve çatalda rahatsız ediyor.
