Common on the streets of Peshawar and Karachi, mantu are made by filling thin dough with spiced ground beef and steaming the dumplings. A yogurt sauce and melted butter poured over the top give this hearty Pakistani steamed pastry its distinctive flavor.

How to make it?

Knead the dough

Knead the flour, egg, water and salt together to make a firm but elastic dough.

Let the dough rest

20 min

Wrap the dough and let it rest at room temperature for 20 minutes. This will make it easier to roll out.

Prepare the filling

10 min

Finely chop the onion and mix it with the ground beef, cumin, black pepper and salt.

Shape the mantu

30 min

Roll the dough out thinly and cut it into squares. Place some filling in the center of each square and bring the corners together to seal.

Steam the dumplings

25 min

Arrange the mantu in a greased steamer basket, leaving space between them. Steam for 25 minutes.

Serve with the sauce

Mix the yogurt, garlic and salt until smooth to make the sauce. Melt the butter and toast the Turkish red pepper flakes in it. Drizzle the yogurt sauce and then the butter over the steamed mantu. Serve with dried mint.

Reminder

Leave space between the mantu in the steamer. If they stick together, steam cannot circulate well and the filling may remain undercooked. Allergens: contains wheat (gluten), eggs, milk and dairy products (yogurt, butter).
