A staple of New Zealand breakfasts, these small, fluffy pancakes are made by cooking a baking-powder batter in a frying pan in minutes. With no wait for the batter to rise, they can be frozen and reheated as needed.

Step by Step

How to make it?

1

Mix the batter

5 min

Mix the flour, baking powder, sugar and salt. Add the egg and milk and mix into a smooth batter.

2

Cook

3 min

Lightly oil the pan and add a tablespoon (15 ml) of batter. Cook for 2 minutes until bubbles appear on the surface, then turn and cook for another 1 minute.

3

Repeat

7 min

Continue cooking the remaining batter in the same way to make small pikelets.

Reminder

Do not overheat the frying pan, or the pikelets may burn on the outside and stay raw inside. Allergens: contains gluten (flour), milk and dairy products, and egg.
