Pastries and dough-based dishes
A popular Turkish breakfast treat made by shaping yeast dough into small pieces and deep-frying them until puffed and hollow inside. Serve hot with honey, grape molasses, or jam.
Add the fresh yeast and sugar to the lukewarm water. Cover and leave for 10 minutes, until foamy.
Add the yogurt, flour, baking powder and salt, then knead into a soft dough that is slightly sticky to the touch.
Cover the dough and leave it in a warm place to rise until doubled in size.
Pinch off pieces of dough and flatten them by hand. Fry in hot oil over medium heat until golden on both sides. If the oil is too hot, the outside may brown quickly while the inside remains doughy.
Keep the oil at a moderate temperature; otherwise, the pastries may brown quickly on the outside while remaining doughy inside. Allergens: contains wheat (gluten) and milk and dairy products.
