This rich pilaf for a crowd combines seared cubed beef with caramelized onion, pistachios, and rice. It is made entirely with olive oil, so it is lactose-free without sacrificing flavor.

Sear the cubed beef in olive oil and set it aside. In the same oil, sauté the onions for 12 minutes, until caramelized.
Add the pistachios and sauté for 2 more minutes.
Add the drained rice and beef and stir for 2 more minutes.
Add the hot water, salt, and black pepper. Once it boils, cover and cook over low heat for 18 minutes.
Remove from the heat and let it rest, covered, for 8 minutes.
Be sure to rinse and soak the rice before cooking, or the pilaf may be sticky. Do not skip the resting time; the grains separate only after they rest. Allergen: contains tree nuts (pistachios).
