Brown the chicken
10 minHeat the olive oil in a large pot and brown the chicken thigh pieces on all sides.
Plov, a dish influenced by Tatar cuisine in southern Ukraine, is a hearty one-pot meal of chicken, plenty of carrots, and rice. The carrots’ natural sweetness gives the rice rich color and flavor. It cooks in one pot and holds up well cold, making it convenient for a picnic.
Heat the olive oil in a large pot and brown the chicken thigh pieces on all sides.
Add the onion and carrot sticks and sauté until softened. Stir in the cumin and salt.
Arrange the rinsed rice and whole head of garlic over the vegetables. Add the water and bring to a boil, then cover and cook over low heat.
Remove from the heat and let rest, covered, for 10 minutes. Remove the garlic head, stir, and serve.
Rinse the rice thoroughly before cooking; excess starch can make it stick to the bottom of the pot and develop a scorched smell.
