Polenta is coarsely ground cornmeal cooked in salted water with frequent stirring. Quick-cooking versions can turn out gritty; for a creamy texture, the cornmeal needs time to absorb the water and release its starch, which takes about 40 minutes. In northern Italy, it was a staple in households where meat was scarce, which is why the mushroom sauce served over it is economical too.

Salt the Water and Stream in the Cornmeal

Bring the water and salt to a boil in a heavy-bottomed pot. Hold a whisk in one hand and slowly pour the cornmeal into the water in a thin stream, whisking constantly. The mixture will begin to thicken right away; turn the heat to its lowest setting.

Cook, Stirring

Switch to a wooden spoon and stir every 4–5 minutes, scraping the bottom and sides of the pot. The polenta will bubble and splatter at first, then become thick; it is ready when a spoon briefly stands upright in it. Taste it: if the grains still feel gritty, add 100 ml hot water and cook for 10 more minutes.

Prepare the Mushrooms and Vegetables

Wipe the mushrooms with a damp cloth without soaking them, then slice them 4–5 mm thick. Finely dice the onion, mince the garlic, and chop the parsley. Washing mushrooms adds water, causing them to steam instead of brown.

Sauté the Mushrooms over High Heat

Heat the olive oil in a large skillet until hot, then spread the mushrooms in a single layer; cook in two batches if needed. The mushrooms will first release their liquid, which will then evaporate—the browning happens after that. When the edges turn golden brown, add the onion and salt and cook for 3 more minutes, then stir in the garlic.

Finish the Sauce

Add the tomato paste and cook for 1 minute. Add the thyme and vegetable broth. Cook over medium heat, scraping the bottom of the pan, until the sauce is thick enough to coat the back of a spoon. Stir in the black pepper and half the parsley at the very end.

Finish and Plate the Polenta

Remove the polenta from the heat and whisk in the butter and Parmesan; this makes it glossy and creamy. Spoon it onto warm plates and make a slight well in the center. Pour the mushroom sauce into the well, sprinkle with the remaining parsley, and serve right away—the polenta will firm up as it sits.

Reminder

Do not dump the cornmeal into the water all at once. Hold a whisk in one hand and pour it in a thin stream. Any lumps that form will not break up as it cooks.

Mısır irmiğini akıtırken çırpma teliyle karıştırdım, hiç topak olmadı. Kırk dakikayı gözden çıkarın, yarım pişmiş polenta kum gibi kalıyor. Mantarı yüksek ateşte ve tavayı kalabalık etmeden kavurmak da önemli, hepsini birden atınca su salıp haşlandı.
