Inspired by Iraq’s love of pomegranates, this recipe is made by juicing fresh pomegranate seeds, briefly simmering the juice, and freezing it in small ice cube trays. These cubes contain no added sweetener and are used in small portions, such as 1 spoonful in sparkling water or tea.
Extract the juice from the pomegranate seeds by pressing them through a strainer or blending and straining them.
Mix the pomegranate juice with the water and simmer gently over low heat for 10 minutes to reduce it slightly.
Let the liquid cool until lukewarm, then divide it among ice cube molds. If you like, add one mint leaf to each compartment.
Place the molds in the freezer and leave them for 3 hours, until completely solid.
If you simmer the pomegranate juice for too long, it will concentrate into a syrup and become difficult to pour into the molds. Use these cubes in small portions to keep them concentrated and in line with a ketogenic diet; do not drink a full glass.
