Potato rolls are yeasted bread rolls made with boiled, mashed potato mixed into the dough. Potato starch binds and retains moisture, so the rolls stay soft for 3 days after baking. Mash the potatoes while hot and add them to the dough while lukewarm; cold potatoes will leave lumps. The amount of flour depends on how moist the potatoes are, so reserve the last 50 g until the end.

Boil and mash the potatoes

Boil the potatoes with their skins on in plenty of water for 18 minutes, until a fork slides in easily. Peel them while hot and pass them through a potato ricer; potatoes mashed with a fork will retain lumps that carry over into the dough. Let the mash cool until lukewarm; hot potatoes will kill the yeast.

Knead the dough

Dissolve the yeast and sugar in the lukewarm milk and let stand for 5 minutes. Add the lukewarm potato mash, melted and cooled butter, salt, and 500 grams of the flour. Knead for 10 minutes. The dough should be soft and slightly tacky; if it is still very sticky, add the remaining 50 g of flour a little at a time. Cover and let rise.

Shape the rolls

Turn the risen dough out onto the work surface without punching it down, then divide it into 18 pieces. Roll each piece into a ball and arrange them spaced apart on a parchment-lined baking sheet. Cover and let the rolls rise again in the pan. They are ready when a gentle press with your finger springs back slowly.

Brush and top the rolls

Brush the risen rolls with beaten egg yolk and sprinkle with sesame seeds. Use a light touch; pressing the brush down can deflate the risen dough.

Bake

25 min

Bake in an oven preheated to 190°C / 375°F for 25 minutes. The rolls are done when the tops are deep golden brown and tapping the bottom with a finger makes a hollow sound. Cool on a wire rack and store in an airtight container; these potato rolls will stay soft even on the third day.

Reminder

Let the dough rise until doubled, about 70 minutes, then let the shaped rolls rise on the baking sheet for another 20 minutes. These times are not included in the recipe time.
