Prasorizo is the simplest of the Greek ladera (olive oil) dishes—leeks and rice, and nothing else. Slowly softening the leeks is key: rushed frying leaves them bitter, while 18 minutes over low heat brings out their sweetness. The rice should be loose and spoonable rather than fluffy, and is finished with lemon.

Wash and thinly slice the leeks

Trim the roots and dark green tips from the leeks. Split them lengthwise and rinse well under running water between the layers, where grit tends to collect. Drain, then cut into thin 5 mm rounds. Thin slices soften faster.

Slowly soften the leeks

Heat the olive oil in a pot and add the leeks and half the salt. Partially cover and cook over the lowest heat. The leeks will first release liquid; as it evaporates, they will shrink to about one-third of their volume and turn pale green. Do not brown them; if the edges turn brown, the heat is too high.

Add the green onions

Add the thinly sliced green onions and cook for 3 more minutes. They soften much faster than leeks, so add them later. The mixture should look glossy and coated in oil.

Toast the rice

Add the rice to the pot without rinsing it and stir for 2 minutes, until the grains are glossy with leek-infused oil. Do not rinse the rice; its surface starch gives this dish the desired body.

Cook uncovered with vegetable broth

Pour in all the hot vegetable broth at once and add the remaining salt. Once it boils, reduce the heat to medium-low. Cook uncovered, stirring occasionally; covered, the rice will absorb too much liquid and the prasorizo will not stay loose. Remove from the heat when the rice is tender to the bite but visible liquid remains in the pot.

Finish with dill and lemon

Stir in the chopped dill, grind in the black pepper, and squeeze half the lemon directly into the pot. Cover and let rest for 5 minutes. Serve with the remaining lemon cut into wedges; prasorizo can also be eaten warm.

Reminder

When you remove the pot from the heat, the rice should look slightly wetter than you want it to serve. It will continue absorbing liquid as it rests and reach the right consistency on the plate.

Pırasayı eritmek yirmi dakika sürüyor ama o sürede tatlanıyor. Aceleyle kavurunca keskin kaldı. Dereotunu ocaktan aldıktan sonra katmak gerekiyor, pişirirken attığımda hem rengi karardı hem kokusu uçtu.
