This lesser-known Aegean jam is made by peeling prickly pears carefully, reducing the sugar, and cooking the fruit quickly in a pressure cooker. The jam is stored in small jars that are easy to pack in a lunchbox.

How to make it?

Prepare the fruit

Carefully peel the spiny skins from the prickly pears and remove the fruit. Set the leftover peels and seeds aside in a separate container.

Cook in the pressure cooker

40 min

Put the prepared fruit, sugar, and lemon juice in the pressure cooker. Close the lid and cook for 40 minutes after it comes to a boil.

Check the consistency

10 min

Release the pressure and open the lid. If the jam is not thick enough, boil it uncovered for 10 minutes more.

Fill the jars

10 min

Pour the hot jam into sterilized jars, turn them upside down, and let them cool.

Reminder

Wear thick gloves when peeling prickly pears to protect yourself from their spines; touching them with bare hands can irritate the skin.
