A holiday favorite in Indian cuisine, puran poli is made by sweetening red lentils with sugar and cardamom, then wrapping them in thinly rolled dough. It stays delicious at room temperature, making it a good choice for picnics.

How to make it?

Make the dough

Knead the flour, cooking oil, warm water, and salt into a soft dough. Cover and let rest for 10 minutes.

Make the filling

Boil the red lentils in water until soft, then drain and mash with the sugar and cardamom.

Fill and roll

Divide the dough into small balls. Fill each with lentil mixture, seal the edges, and roll very thin.

Cook

Brush the hot griddle with clarified butter and cook each side for 3 minutes, until golden.

Reminder

Seal the edges of the dough well around the filling, or it may spill out when you roll it thin. Wait for small bubbles to form on the first side before flipping it on the hot griddle. Allergens: contains wheat (gluten) and dairy (clarified butter).

Hamuru ilk seferinde biraz kalın açtım ve mercimek harcı birkaç yerden dışarı taştı, ikinci denemede daha ince açınca sorun kalmadı. Piknik sepetine koyduğumda oda sıcaklığında bile lezzetini koruyordu.
