Purslane is often served as a yogurt salad or cooked with olive oil, but here it simmers with ground beef, tomatoes, and a little rice. It needs only a short cooking time: the stew is ready when the leaves darken and wilt. Overcooked purslane releases water and loses its texture. Serve hot with garlic yogurt on the side.

How to make it?

Trim the purslane

Cut off the thick, tough lower stems and separate the leafy upper stems. Wash twice in plenty of water until no soil remains at the bottom. Drain and coarsely chop.

Brown the ground beef

Cook the ground beef in olive oil over medium heat until it releases its liquid, the liquid evaporates, and the meat breaks into separate crumbles. No pink should remain; the cooked beef should reach 71°C / 160°F.

Add the onion and tomato paste

Add the finely chopped onion and crushed garlic. Cook for 5 minutes, until the onion softens. Stir in the tomato paste and cook for 1 minute more.

Add the tomatoes and rice

Add the grated tomatoes, rinsed rice, and hot water. Bring to a boil.

Cook the purslane

15 min

Add the purslane, salt, black pepper, and red pepper flakes, then stir once. Cover and cook over low heat for 12–15 minutes. Remove from the heat when the purslane has wilted and the rice is tender.

Serve with yogurt

Whisk the yogurt with the crushed garlic. Spoon the stew onto plates while hot and serve the yogurt on the side.

Reminder

Wash the purslane just before cooking. After adding it to the pot, cook covered and avoid frequent stirring; overcooking or stirring too much will make it watery and cause it to fall apart.

Pirinci koymayı unuttum, yemek fazla sulu kaldı. Pirinç burada kıvam bağlıyormuş, ertesi gün bir kaşık pirinç atıp tekrar kaynattım ve toparladı. Yalnız pirinci baştan koyarsanız semizotunun suyunu da hesaba katıp sıcak suyu azaltın.

Sarımsaklı yoğurdu yanında ayrı verdim, semizot zaten ekşimsi, karıştırınca bastırıyor. Ertesi gün kalanını yoğurtla karıştırıp yedim, o zaman da fena olmadı ama ilk gün ayrı vermek daha doğru geldi.

Yanında vermek de doğru. Üstüne dökecekseniz yoğurdu az sarımsakla yapın, semizotunun kendi ekşisiyle çakışmasın.

Semizotunun kalın saplarını da attım ama sonra pişman oldum, o saplar yemeğe doku katıyormuş. İkinci sefer ince sapları bıraktım, daha iyi oldu.

Kıymayı suyunu çekene kadar kavurmak lazım, erken soğan atınca kıyma haşlanıyor ve gri kalıyor. Kıymanın kenarları kahverengileşene kadar bekleyip soğanı sonra attım, yemeğin tadı ilk denememden çok daha derin çıktı.
