Shor gogal, traditionally made for Azerbaijan’s Novruz celebrations, is prepared here with seasoned ground beef tucked into a savory layered dough. In the air fryer, the outside crisps quickly while the inside stays tender.
Knead the flour, butter, yogurt, salt, and baking powder into a smooth dough.
Mix the ground beef with the finely chopped onion, red pepper flakes, and cumin to make the filling.
Roll the dough into small rounds. Place some filling in the center of each, seal the edges tightly, and brush the tops with beaten egg. Air-fry at 190°C / 375°F for 12 minutes, until golden. If you do not have an air fryer, bake in an oven preheated to 200°C / 390°F for 18–20 minutes.
Seal the edges well when filling the dough, or the filling may leak out as it cooks. Do not crowd the air fryer basket; leave space between pastries for air to circulate. Allergen: Contains wheat (gluten), dairy, and eggs.
