Cook the guavas

Inspired by the abundant guava harvest in Egypt’s Nile Delta, this jam is made by briefly cooking chopped fruit with sugar and lemon juice, then mashing it. Because it does not need a long simmer, it can be prepared quickly for brunch.
Put the chopped guavas, sugar, and lemon juice in a pot. Cook over medium heat for 10 minutes, stirring.
Lightly mash the guavas with the back of a spoon and simmer for 3 minutes more, until jammy.
Fill a clean jar with the hot jam and close the lid. Let it cool to room temperature.
Close the lid immediately after filling the jar with hot jam; closing it while the steam is still inside helps the jam stay fresh longer.

Kavanozu açar açmaz güzel bir guava kokusu yayıldı, kıvamı da tam marmelat gibi bağlamış, kahvaltı sofrasında herkes bir kaşık daha istedi.
Guava bulmakta epey zorlandım, semt pazarını üç hafta dolaştıktan sonra sonunda 4 tane olgun meyve buldum; tarifteki ölçüyle tam kıvamını buldu, hiç sulanmadı ve rengi de güzel canlı kaldı.
