Inspired by Argentina’s tradition of making quince preserves, this spiced drink is made by pressure-cooking chopped quince with cinnamon and cloves, then straining it. Dairy-free and lightly sweetened, it can be served as a low-calorie hot drink. The quince’s natural pectin gives it a slightly thick texture.

How to make it?

Pressure-cook the quince

Place the chopped quince, water, cinnamon stick, and cloves in a pressure cooker. Close the lid and cook for 15 minutes after the cooker reaches pressure.

Strain

Release the pressure and open the lid. Strain the liquid through a sieve to separate the quince pieces and spices. Do not squeeze the pulp.

Finish with lemon juice

Add the lemon juice to the strained liquid and stir.

Serve

Divide the drink among cups and serve hot.

Reminder

Do not squeeze the quince pieces while straining; the pressed pulp will cloud the drink and leave a bitter taste.

Düdüklü tencerede 15 dakika yerine tam 20 dakika pişirdim çünkü elimdeki ayva parçaları biraz büyüktü, süzdükten sonra sıvı beklediğimden çok daha koyu ve kıvamlı çıktı.
