Made by simmering quince with its peel and straining the liquid, this easy syrup adds a winter drink to a celebration table. Lemon juice balances the sweetness, and the drink is refreshing served over ice.

Step by Step

How to make it?

1

Prepare the Quince

8 min

Cut the quince into large pieces without peeling it; the peel adds body and a deep color to the syrup.

2

Simmer

40 min

Bring the quince, sugar, and water to a boil in a saucepan, then simmer over low heat for 40 minutes.

3

Strain

5 min

Strain the mixture through cheesecloth and discard the quince pieces.

4

Chill and Serve

60 min

Balance the syrup with lemon juice, chill in the refrigerator for at least 60 minutes, and serve over ice.

Reminder

Simmer the quince with the peel for a darker color and thicker syrup; do not peel it. Chill the syrup in the refrigerator for at least 60 minutes before serving so the flavor can develop.

Ayvaları kabuklu haşladım ama suyu gereğinden fazla kaynattım, 40 dakika yerine tam 1 saat ocakta bıraktım ve şerbet beklediğimden koyu, neredeyse pekmez kıvamına yakın çıktı.
