Quindim continues the tradition of Portuguese court desserts in Brazil: egg yolks, sugar, butter, and grated coconut are mixed and baked in a water bath. As it bakes, the mixture naturally separates into two layers: a glossy, quivering yellow layer on top and a coconut layer underneath. When unmolded and inverted, the glossy surface faces up.

How to make it?

Strain the egg yolks

Separate the egg yolks from the whites and remove the white cord (chalaza) attached to each yolk. Pass the yolks through a fine-mesh strainer; unstrained yolks can look stringy after baking.

Mix the ingredients

Using a spatula, stir together the strained yolks, sugar, salt, and melted lukewarm butter. Do not whisk; adding air can make the top layer porous. Add the milk and grated coconut and stir just until combined. Cover and let rest.

Prepare the molds

Preheat the oven to 180°C / 355°F. Grease each cup of a 12-cup muffin pan with butter and coat with sugar, tapping out the excess. Divide the rested mixture among the cups, filling each about three-quarters full.

Bake in a water bath

Set the muffin pan inside a deep roasting pan. Pour boiling water into the larger pan until it reaches halfway up the muffin pan. Bake for 35–40 minutes. The tops should be glossy and golden; when you gently shake the pan, the centers should wobble like custard but not flow.

Unmold and invert

Remove the pan from the water and cool the quindins completely on a wire rack. Run a thin knife around the edge of each one and invert onto a plate; the glossy yellow layer will be on top and the coconut layer underneath.

Reminder

Let the mixture rest for 30 minutes after preparing it. During this time, the coconut absorbs moisture and air bubbles rise to the surface, helping prevent holes in the top layer. Do not invert the quindins until they have cooled completely in their molds; warm ones will fall apart. Allergen: Based on the ingredient list, this dessert contains milk and dairy and eggs.
