These raisin cookies are made by mixing raisins into a simple butter dough, slicing it into rounds, and baking. Since the dough can be stored in the freezer, you can bake fresh cookies whenever you like.

Make and shape the dough

Beat the butter and sugar until creamy. Add the egg and vanilla. Mix in the flour, baking powder, and salt, then fold in the raisins. Shape the dough into a log.

Freeze the dough

Wrap the log and freeze it for at least 45 minutes, until firm.

Slice and bake

20 min

Slice the firm log into 1-centimeter-thick rounds and arrange them on a baking sheet. Bake in a preheated 175°C / 345°F oven until the edges begin to color.

Reminder

Roll the dough into a log and wrap it; a 45-minute chill is a quicker option. It can be stored in the freezer for weeks. Contains wheat (gluten), dairy, and eggs.

Ruloyu 45 dakika yerine bütün gece dondurucuda bıraktım, dilimlemesi çok daha kolay oldu ve kurabiyeler daha düzgün yuvarlak çıktı. Kuru üzümleri ılık suda 5 dakika bekletip kullandım, daha yumuşak kaldılar.
