Ras malai is a Bengali-origin Indian dessert. Milk is curdled with lemon juice to make fresh chhena cheese, which is kneaded and shaped into small discs, then cooked in sugar syrup and chilled in thickened milk flavored with saffron and cardamom. The discs swell to twice their size in the syrup, then soak up the milk like a sponge. The key is kneading the cheese thoroughly; poorly kneaded chhena can fall apart in the syrup.

How to make it?

Curdle the milk

Bring 1 liter of milk to a boil in a wide pot, then turn off the heat. Gradually add the lemon juice, stirring gently, and stop when the milk separates into white curds and clear, greenish whey. Immediately add cold water to the pot to keep the curds soft.

Drain and rinse

Strain the curds through a cheesecloth-lined strainer and rinse under cold water to remove the lemon scent. Gather the corners of the cloth, squeeze gently, and hang the bundle until it stops dripping.

Knead the chhena

10 min

Transfer the chhena to a clean counter and knead for 10 minutes, pushing it forward with the heel of your palm. The grainy curds should become a smooth dough that leaves a slight oily sheen on your palm.

Prepare the saffron-cardamom milk

In a heavy-bottomed pot, simmer 500 ml milk for 20–25 minutes, stirring often so it does not scorch. Scrape any cream skin from the sides back into the milk. Add the sugar, saffron, and cardamom seeds removed from their pods and crushed. Once the sugar dissolves, remove the pot from the heat.

Shape the discs

Divide the dough into 16 equal pieces. Roll each into a smooth ball between your palms, without cracks, then gently flatten it into a disc. Any cracks at the edges can cause a disc to fall apart in the syrup.

Cook in the syrup

Bring the sugar and water to a boil in a wide pot. Add the discs to the boiling syrup and cook over high heat for 15–17 minutes; they will double in size. If the syrup reduces too much, add a ladleful of hot water.

Squeeze and add to the ras

Lift the discs out with a slotted spoon. Once cool enough to handle, gently squeeze each between your palms to remove the syrup without breaking it. Add the discs to the warm ras, sprinkle with pistachios, and refrigerate.

Reminder

Chill the ras malai for at least 5–6 hours before serving so the discs can absorb the milk. Hang the chhena until it stops dripping, but do not let it dry out; dry cheese can crack in the syrup. Allergen: Contains milk and dairy products and tree nuts. Check packaged products for other allergens.

Çhenayı yoğurma süresini kısa tuttum, diskler şurupta dağıldı. On dakika avuç içiyle yoğurunca hamur pürüzsüzleşti ve topaklar şişip bütün kaldı.
