This rhubarb preserve uses a classic English garden vegetable: first roast the rhubarb in an air fryer to concentrate it, then simmer it with a sweetener. A diabetes-friendly sweetener is used instead of the sugar found in traditional recipes.

Roast the Rhubarb in the Air Fryer

Spread the sliced rhubarb stalks in the air fryer basket and roast at 180°C / 355°F for 10 minutes, until the edges are lightly browned. If you do not have an air fryer, roast them for the same amount of time in an oven preheated to 180°C / 355°F.

Simmer

15 min

Transfer the roasted rhubarb to a saucepan and stir in the sweetener, lemon juice, and grated ginger. Simmer over low heat for 15 minutes, until thickened.

Mash the Rhubarb

Gently mash the mixture with a fork, leaving some texture; it does not need to be completely smooth.

Fill the Jars

Fill clean jars with the hot preserve and close the lids tightly. Let the jars cool at room temperature.

Reminder

Never use rhubarb leaves; only the stalks are edible. The leaves are poisonous.

Tatlandırıcıyı tarifte yazan ölçüde kullandım ama sonuç benim damağıma göre hâlâ fazla ekşi geldi, tatlandırıcı miktarını artırmak kıvamı bozar mı acaba, yoksa limon suyunu mu azaltmalıyım?

Tatlandırıcı miktarını artırmak kıvamı bozmaz, sadece tatlılığı değiştirir; yarım su bardağı daha ekleyip birkaç dakika daha kaynatabilirsiniz.
