Saffron gives this Milanese risotto its color and aroma; its creaminess comes from the rice’s own starch, not from cream. Adding hot stock one ladle at a time while stirring dissolves the starch on the outside of each grain while the center stays firm. Beating in cold butter and Parmesan off the heat (mantecatura) makes the risotto flow in waves and should never be skipped.

How to make it?

Heat the stock and bloom the saffron

Keep the stock in a separate saucepan just below a simmer; adding cold liquid would stop the cooking and toughen the outside of the rice grains. Crush the saffron threads in a small bowl with one ladle of hot stock and set aside. Let it steep for at least 10 minutes, until the liquid turns orange. If you are using homemade chicken stock instead of beef stock, make sure the chicken used to prepare it reached 74°C / 165°F in its thickest part.

Soften the onion

Melt half the butter (40 g) in a wide, heavy-bottomed pot. Add the very finely chopped onion and soften it over low heat without letting it brown. Stop when the onion turns translucent; browned onion adds a caramel flavor that can overpower the saffron.

Toast the rice (tostatura)

Add the rice to the pot without rinsing it. Raise the heat to medium and toast the rice, stirring constantly. As the grains heat up, their edges turn translucent while the centers remain white; you should feel the warmth when you hold your hand above the pot. Do not rinse the rice—the starch washed away is what makes risotto creamy.

Add the stock one ladle at a time

Add enough hot stock to cover the rice and stir with a wooden spoon. As soon as the liquid is absorbed and the spoon briefly leaves a trail on the bottom of the pot, add another ladleful. Repeat for 18 minutes. Add the salt halfway through, and taste a grain during the final 3 minutes: it should have a tiny white core.

Add the saffron

Pour the bloomed saffron liquid into the risotto and stir until the color is evenly distributed. Adding the saffron at the beginning would cause its volatile aromas to dissipate during the long cooking time. The rice will turn a bright yellow.

Finish with mantecatura

Remove the pot from the heat and add the remaining 40 g of cold butter and the Parmesan. Instead of stirring with a spoon, rock the pot toward you and stir vigorously from time to time; the risotto will become glossy and fluid. Grind in black pepper, transfer to a plate, and tap the edge of the plate gently—the risotto should spread on its own when it has the right consistency.

Reminder

After the mantecatura, cover the risotto and let it rest for 2 minutes. If it does not slowly spread when you tilt the plate, whisk in another ladle of hot stock. Allergen note: contains milk and dairy products. Check packaged ingredients for other allergens.

Safranı sıcak et suyunda açmak rengi çok daha eşit dağıtıyor. Mantecatura için tereyağını buzdolabından çıkar çıkmaz koydum, krema gibi bağladı. Pirinci kavururken taneler şeffaflaşana kadar beklemek gerekiyor, erken et suyu ekleyince risotto un gibi bir kıvam alıyor.

Safranı sıcak sıvıda açmak standart yöntem. Tereyağını soğuk koymak da doğru, sıcak tereyağı emülsiyonu kurmadan eriyip yağ olarak ayrılıyor.
