Rizz bhalib is a beloved Iraqi milk dessert made by cooking rice with milk and sugar in a pressure cooker, then flavoring it with rose water. It is cooled in serving bowls and topped with cinnamon and hazelnuts for a special occasion.

How to make it?

Cook the rice

Add the rinsed rice, milk, sugar, and salt to the pressure cooker. Close the lid and bring to a boil over medium heat. When the cooker whistles, reduce the heat and cook for 8 more minutes.

Let the pressure release

10 min

Remove the pressure cooker from the heat and wait 10 minutes for the steam to release naturally. Then open the lid.

Flavor the pudding

Stir in the rose water. If the pudding seems too thick, add 1 spoonful of lukewarm milk.

Divide among serving bowls

Divide the hot mixture among serving bowls and let cool at room temperature for 15 minutes.

Chill in the refrigerator

Cover the bowls with plastic wrap and refrigerate for at least 2 hours so the pudding can set.

Serve

Sprinkle with cinnamon and crushed hazelnuts to serve.

Reminder

Never force the steam out of the pressure cooker; let it release naturally, or hot milk may splatter. Allergens: contains milk and dairy products, and tree nuts (hazelnuts).
