Arrange the onions

Heat the oven to 200°C / 390°F. Remove only the loose outer onion skins; do not peel off the dry skin or trim the root ends, because the skins act as an envelope while roasting. Arrange the onions on a baking sheet, brush them with 1 spoonful of olive oil, and cover the sheet with aluminum foil.

Roast in the oven

Slide the sheet onto the oven’s middle rack and roast for 45 minutes. Uncover the onions at the thirtieth minute; the skins should be papery dry and a dark brown syrup should have formed on the bottom of the pan. Roasting is done when a skewer inserted into the center of an onion meets no resistance.

Peel and dress

Hold the cooled onions by their skins and squeeze out the insides; the layers should come away whole. Separate the layers into large pieces and put them in a wide bowl. Scrape the dark syrup from the pan over them. Add the pomegranate molasses, olive oil, salt, and red pepper flakes, and toss gently. Add the crushed walnuts and chopped parsley just before serving.
Reminder
Let the onions cool undisturbed for 10 minutes after removing them from the oven; if you peel them while hot, the layers fall apart and the mezze turns mushy.
