Boil the Rose Hips

A deep orange winter jam made from the fleshy part of rose hips, carefully separated from their hairy seeds. These wild berries grow naturally and add a tart freshness to the breakfast table.
Rinse the rose hips and boil them in water until tender.
Press the boiled rose hips through cheesecloth to separate the pulp completely from the hairy seeds.
Cook the pulp with the sugar and water over medium heat, stirring frequently, until thickened.
Add the lemon juice and boil for a few more minutes. Important: Test the consistency by dropping some jam on a plate and checking whether it leaves a trail. While it is boiling hot, fill sterilized jars and seal them.
Important: Remove all the hairy seeds from the rose hips; the hairs can irritate the mouth if swallowed. Contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars while the jam is boiling hot, seal, and store in a cool, dark place.
