Rose hip jelly is made by simmering whole rose hips with tart apples, then straining the juice through two layers of cheesecloth. The most tedious part of rose hip jam is removing the fine hairs and seeds one by one; for jelly, the cheesecloth does this job, leaving the hairs and seeds behind. Rose hips alone do not have enough pectin to set the jelly, so tart apples are added with their skins and cores.

How to make it?

Trim and crack the fruit

Use scissors to trim the stems and black blossom ends from the rose hips. Rinse and drain them. Press the fruit on a cutting board with the flat side of a knife to crack it; whole fruit releases its juice with difficulty. Coarsely chop the apples with their skins and cores.

Simmer

50 min

Put the rose hips, apples, and 1.5 liters of water in a pot. Bring to a boil, then simmer over low heat with the lid slightly ajar for 45 minutes. The rose hips should fall apart when pressed with a spoon; mash them roughly in the pot.

Hang to Drain

10 min

Pour the mixture into a strainer lined with damp, wrung-out double-layer cheesecloth, or into a cheesecloth bag suspended over a wide bowl. Let it drain on its own. Do not squeeze the cloth; squeezed juice will cloud the jelly. Measure the juice in the morning; it should yield about 1 liter.

Boil the Juice with Sugar

Bring the juice and lemon juice to a boil in a wide pot. Add the sugar and stir until dissolved, then boil over high heat, skimming off the foam. Remove from the heat when it reaches 104–105°C / about 220°F, or when a drop placed on a cold plate wrinkles when pushed.

Jar the Jelly

While the jelly cooks, wash the jars and lids in hot, soapy water and boil them for 10 minutes. Keep them in hot water until ready to fill. Pour the jelly through a fine strainer lined with cheesecloth into hot jars; any hairs that passed through the first straining will be caught there. Leave 0.5–1 cm of headspace, wipe the rims with a clean, damp cloth, and close the jars. For jars intended for pantry storage, process them with the lids on in a boiling-water bath for 10 minutes.

Reminder

Let the juice drain through the cheesecloth on its own for 8–12 hours; this waiting time is not included in the recipe duration. Do not squeeze the cloth: the fine hairs from the rose hips can pass through when squeezed, irritating the throat and clouding the jelly.
