Roti bakar is a Malaysian breakfast classic: bread slices are fried in butter and spread with homemade kaya, a coconut milk and egg mixture. The lightly sweet, creamy spread makes a simple breakfast that children will also enjoy.

Cook the kaya spread

Whisk the eggs, coconut milk, granulated sugar and salt in a large bowl. Put the mixture in a heatproof bowl set over a saucepan of boiling water and cook for 25 minutes, stirring continuously, until thickened. Keep the heat low to prevent the eggs curdling.

Rest the spread

30 min

Remove the kaya spread from the heat and leave at room temperature for 30 minutes. If used while hot, it will be runny on the bread; it thickens as it cools.

Fry the bread

8 min

Melt the butter in a frying pan and fry the bread slices for 8 minutes, until golden on both sides.

Spread and serve

2 min

Spread plenty of kaya over the hot bread slices and serve in pairs on plates.

Reminder

Never use a high heat when cooking the kaya. Steam from the boiling water cooks the eggs gently; otherwise they will curdle. Allergens: contains gluten (bread), milk and dairy products (butter), and eggs.
