Pizza and Turkish flatbreads
This quick Russian kefir flatbread is cooked in a hot pan, then topped with smoked salmon and cream cheese. Made without yeast, it is ready quickly and can be served open-faced for breakfast or a light evening meal.
Mix the kefir, salt and baking soda. Gradually add the flour until a soft, elastic dough forms. Cover and leave to rest for 10 minutes.
Divide the dough into four pieces and roll each one into a round about 4 mm thick. Cook in a hot pan brushed with butter until golden on both sides.
Once the flatbreads have cooled slightly, spread them with cream cheese, top with the smoked salmon, and garnish with dill and lemon slices.
The thinner you roll the dough, the crispier the flatbreads will be; thicker rounds will be softer. For your first try, aim for a medium thickness. Allergens: contains wheat (gluten), milk and dairy products, and fish.
